Chef Flynn McGarry to open Cove, a California-Inspired Fine Dining Restaurant
A new chapter in McGarry’s culinary evolution, Cove reimagines fine dining for a new generation

(New York, NY, Embargoed: September 10, 2025)—On October 7, chef Flynn McGarry will open Cove, a new fine dining restaurant located in New York’s Hudson Square neighborhood. A California-inspired concept, Cove reimagines traditional fine dining for a new generation, offering seasonal, ingredient driven cuisine in an intimate setting where chefs and guests engage directly.
Cove is McGarry’s most personal project to date, shaped not only by his commitment to exceptional local ingredients and understated design, but also by his evolving philosophy around sustainability and restaurant culture. Every detail, from the food to the service model, reflects a commitment to care, collaboration, and long-term sustainability for both the food and the team that serves it.
The dining rooms wrap around an open kitchen, where each course is prepared and presented by McGarry and his team. Guests are welcomed into a refined yet relaxed space designed to feel like an extension of McGarry’s own home, handcrafted and deeply considered.
“This project is a continuation of our goal to offer a luxurious dining experience without the formality,” says McGarry. “Cove is about simplicity, care, and attention. I want guests to feel as relaxed as they are in their own homes, while being served the highest quality of food surrounded by a thoughtfully designed space.”

Food & Experience
Cove’s menu reflects the seasons and integrity of each ingredient. In preparation for the restaurant, McGarry has built a garden in Brookhaven, Long Island, where he and his team grow vegetables, herbs, and flowers used in the kitchen daily. Other ingredients are sourced through long-standing relationships with local farmers and foragers along the Northeast.
The restaurant offers a range of formats, from an eight-course kitchen menu to a generous family-style dinner and à la carte options, designed to accommodate both spontaneous drop-ins and celebratory evenings. Menus evolve frequently based on what’s in season, with each dish offering a focused, ingredient forward nuance of McGarry’s cooking. Cove provides patrons with the chance to enjoy the kitchen menu in a set-back room adjacent to the kitchen, while the family-style and à la carte options are offered in the airy main dining room.
Sample fall dishes include:
+ New beets with rose and currant
+ Tomato, plum, thyme
+ Lavash, cod roe, fennel
+ Onion, salsa macha, raspberry
+ Tomato consommé with pickled ginger and summer kosho
+ Grilled squash and peach with coriander and vadouvan
+ Lobster with chanterelles, new potatoes and chamomile
+ Grilled eggplant with truffle, wild rice and dashi
+ Steamed cabbage with white sesame
+ Poached peach with corn ice cream
+ Caramelized sour cream tart
+ Fennel pollen butter cookie
The wine program at Cove will highlight low intervention wines and will explore the history of influence between generations of winemakers. The list will feature approximately 400 wines with a focus on French and American producers, as well as nods to the previous wine list at Gem. Cove will offer a wine pairing crafted in deep collaboration between Chef Flynn McGarry and Wine Director Paris McGarry to accompany the eight-course kitchen menu. This can be ordered as either the full pairing or by the glass.

Design & Sustainability
As with previous projects, McGarry personally designed the interiors of Cove, overseeing everything from the layout to the materials palette. He sourced all the furnishings and decor, drawing on his lifelong appreciation for vintage objects and West Coast modernism. The result is a minimalist dining room that balances ease and refinement through custom cherry and ash wood furniture by Grainwood Studio who built the tables for the original Gem, HAY seating, Farrow & Ball paint, Maharam curtains, David Mellor cutlery, warm pendant lighting from Louis Poulsen and Shane Gabier.
In collaboration with North American ceramicists, McGarry also created a line of custom tableware made specifically for Cove. These pieces, along with other design elements from the restaurant, will be available to purchase at Gem Home, his home goods store, cafe, and grocer in Nolita this October.
Cove reflects an evolution in McGarry’s approach to the restaurant culture. Built with long-term sustainability in mind, for both the product and the people, the restaurant operates as a collaborative, role fluid environment. Depending on the role, team members are offered the opportunity to work across both kitchen and front of house daily, deepening the connection between guest and chef while supporting career longevity and reducing burnout.
Cove will open to the public on October 7.

ABOUT FLYNN MCGARRY
Flynn McGarry first stepped into the kitchen at the age of 10, cooking for his mother’s friends and creating a full-fledged supper club, Eureka, in their family home. In the years that followed, he staged in some of the top restaurants in Los Angeles, New York, and Seattle, including Alma, Eleven Madison Park, and Alinea—all before he was 16. At age 19, McGarry opened his first permanent fine dining restaurant, Gem, in New York City's Lower East Side neighborhood. In November that same year, he was the subject of the documentary Chef Flynn, which debuted in theaters nationwide. In 2022, he opened Gem Wine, a wine bar in New York City showcasing the varied breadth of low-intervention and biodynamic winemakers he personally works with.
